- If you already have tar paper (roofing felt, I presume), thats a vapor barrier. You don't need another. You can caulk the joints between the boards if you'd like.

- Ya, you should make sure that you have enough screws in it so it doesnt shift. thats the main purpose of thinset between the cementboard and subfloor. If your using hardibacker it shows you were every screw should go about 25 screws in each. You also should thinset the joints, just like drywall.

- i think most of the time the boards come in a dimension that puts them below the ceiling line and the difference is filled in with water resistant drywall and finished regularly, then most of the cement board is covered in tile so little finish work is needed on it .. if its all the way up probably just tape it and finish as normal but strictly speaking, the whole layout isnt correct if it terminates at the ceiling joint ..
