What bohemian said rang so true for me! My husband and I have been working and planning for this dream for 10 years, and it is now finally starting to come to fruition. After years of saving, we bought land way out in the country, then lucked in to an adjoining property with a TINY house (less than 600 square feet) that was cheaper to buy than our original plan of setting up a trailer and living in that til we had saved enough to build. So now he and I and our 4 year old are living in this little space. It is a sacrifice, but we are managing just fine. We own a house in the city, and right now we are renting it to friends whose payments pay the mortgage, taxes and upkeep. Once we are ready to build, we will sell the city house and use the capital to build our strawbale house. We have taken courses on timberframing etc, and have 40 acres of mature trees that we hope to use to build. We grow most of our own vegetables and can/freeze/dry for the winter. Eventually, we will grow more. We are working and commuting an hour to the city everyday for the next while until we get our debts paid, then we can look for jobs closer to home that pay less, but allow us to be on the land more so we can have chickens and maybe goats and alpacas. I can't wait til I can afford to leave my job and stay home to look after the garden, my son and the house. It is hard to leave a good, well-paying job. But for us, self-sufficiency is our dream. We don't want to be beholden to anyone. We want to live a healthy, real life.... enjoying the simple pleasures, safe in the knowledge that nothing or no-one can take them away from us, and hopefully leaving a legacy for the future.

I don't have a 1981 Better Homes and Garden cookbook but I do have the Better Homes and Gardens All-Time Favorite Recipes from 1979. They don't have a recipe called Chicken Pot Pie but they do have a recipe called Carolina Chicken Pie which sounds just like a chicken pot pie. Here's the recipe: CAROLINA CHICKEN PIE 1 (4 1/2 to 5 pound) stewing chicken 8 cups water 1 medium onion, sliced 2 celery stalks with leaves 2 parsley sprigs 2 tsp salt 1/4 tsp pepper 3 hard-cooked eggs, chopped 1/2 c all-purpose flour Plain pastry In a 5-quart kettle combine chicken, water, onion, celery, parsley, salt and pepper. Bring to boiling. Reduce heat and simmer, covered, until chicken is tender, about 2 1/2 hours. Drain chicken, reserve broth and 1/4 cup chicken fat. Strain and refrigerate broth. Cool chicken enough to handle. Remove meat from bones; discard skin and bones. Cube meat; place in 13 x 9 x 2 baking pan. Sprinkle chopped hard-cooked eggs on top. In a saucepan combine reserved chicken fat and the flour. stir in 4 cups of the reserved broth. Cook and stir until bubbly; pour over the chicken. Prepare the Plain Pastry for a double-crust pie. Roll pastry to 14 x 12 rectangle. Place pastry over chicken; seal and flute edges. Cut slits; bake at 375 degrees until filling bubbles and pastry browns, about 45 minutes. Makes 6 to 8 servings. PLAIN PASTRY 1 c all-purpose flour 1/2 tsp salt 1/3 c shortening 3 to 4 tablespoons cold water Stir together flour and salt; cut in shortening until pieces are the size of small peas. Sprinkle 1 tablespoon water over part of the mixture. Gently toss with a fork; push to the side of the bowl. Repeat until all is moistened. Form dough into a ball. Continue as directed in recipe. This makes one crust so double it for the above recipe and roll it out as it says above. Hope that helps.

Microwave Meatloaf with Tomato Sauce Ingredients 1 8-ounce can pizza sauce 1/2 cup shredded zucchini 1/4 cup rolled oats 1/4 cup finely chopped onion 3 tablespoons snipped fresh parsley 1 teaspoon bottled minced garlic 1 teaspoon dried thyme, crushed 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1 pound lean ground beef 1/2 pound uncooked ground turkey breast Directions 1. In large bowl, combine 2 tablespoons of the pizza sauce, the zucchini, oats, onion, 2 tablespoons of the parsley, 1/2 teaspoon of the garlic, the thyme, salt, and pepper. Add beef and turkey; mix well. Shape meat mixture into a 7x4x2-inch loaf. Place loaf in a greased 9-inch microwave-safe pie plate or greased 2-quart square baking dish. 2. Cover meatloaf with waxed paper. Microwave on 100% power (high) for 5 minutes, turning plate once*. Tilt dish slightly and spoon off drippings. In a small bowl, stir together the remaining pizza sauce, remaining parsley, and remaining garlic. Pour evenly over meatloaf. Cover with waxed paper; microwave on 50% power (medium) for 21 to 24 minutes or until cooked through (165 degrees F), turning plate twice*. Is this a riddle? The question sounds like you already know what's in your garden, and you're trying to get us to guess... But, in response to what you're actually asking, you have to be more specific. How big of a garden is it, where is it located in relation to the house, are you in a suburb or more of a rural setting, what other plants are growing nearby, is it something you want to have to care for on a daily basis, or just plant and let it go, etc. Generally though, I always like those low, wide-spreading shrubs that only seem to grow outwards, not upwards. They get to about a foot or two high and go generally outwards from the base some metres in diameter. They also require very little work; if they get too big, you can get a pair of big pruning shears and with very little effort you can trim them back
