Big cranes do have to be disassembled into truck sized pieces for transport, and then reassembled on site. Usually, this is done by smaller cranes, which are mobile. Sometimes a big crane can be assembled on the ground with small cranes, and then lift itself into the air. Sometimes smaller cranes are assembled by bigger cranes on the site. Some of the biggest cranes are tower cranes, which sit on tob of a skinny tower and rotate around. These are assembled on the ground and then lift themselves into the air by building the tower under themselves. Look at the attached link to see how this is done.
