If it comes in a tube then put masking tape on both sides of the gap fill it in, it sounds like a messy job to try fill with epoxy cause that stuff is sticky,maybe keeping ur finger wet will help smooth it over. good luck

Do I use plywood and than cement it and than add the new tiles?
- If I understand the problem correctly, it sounds like you have water damage inside you wall. You first need to find out what caused that damage. If you repair the wall without finding the water leak, it will happen again. If the area was dry rot and it didn't sem like there was currently water there, then it is likely safe to fix. Carefully remove tiles until you no longer see any water damage to the wood. I'm not sure what wood is there. If its plywood, replace it with a like thickness (most of the time today, they use drywall, but its a special kind that is usually green that's made for bathrooms and moist areas). Before replacing the tiles, clean them up and remove any old grout from the edges. Be careful as the tile are very brittle and break easy. There are a number of bathroom tile type caulks that can adhere the tile to the wood. I suggest going to somewhere like Lowe's or Home Depot or a similar store and ask someone in the plumbing dept or the paint dept what kind of caulk to use to attach tile to wood. Apply the tile to the wall using the caulk. Now you need to re-grout the seams. Buy grout and apply it in all the seams. Let it completely dry (read the box but most say at least 24 to 48 hrs to completely cure) then after its cured, apply grout sealer over the top of the grout seams.

How careful do I need to be about not getting in on the grout? Unfortunately its a large area, kitchen and dining area. 12‘ x 30‘. Then there is the standard clay bodied tile where the clay is baked , a color on the surface and a glaze and its refired again. Homogenized tiles, and I m not over familiar with them is a very hard tile that has a very low water absorption rate. - In some measure it depends on how strong you want the tiles to be. Fired clay, in even a tile sense, is usually done at 3600 degrees in a kiln. Then cooled, painted/glazed/ etc. and fired again. At a decent pottery retailer you can find dozens of types of clay, and in fact some that is low fire, or even oven bake, which can be hand painted, and perhaps glazed over with a clear coat and no re-firing, but the strength and durability issue will still exist. Clay for tile, Ceramic or Porcelain, is slab rolled for consistency, Cut precisely, fired in kilns, cooled, then is decorated variously. Some larger houses will sell blanks that one can decorate themselves, even coffee mugs/cups/ bathroom sinks. etc. Obviously with a rolling pin and some risers, at 3/8 or 1/4, you could hand roll the clay and cut it, but then what? Below is a link for a general search to a company that can give you all the info you need in various methods and types of clay used. I spent a lot of $$$ with them in the early part of this decade. - sounds like you might have small spots of dry grout--that was not wiped off--not the glaze but actual grout and now it is hard-- use a razor blade to remove these spots carefully--or use a 5 in 1 tool--which is not as sharp--but will remove the excess grout--wipe down with damp sponge couple times
