- When I used to make wedding cakes, I always used a cardboard cakeboard between each tier of stacked cakeSo you could do a round one or two layer, then make a square one or two layer (but put it on a cakeboard the same size or maybe 1/4 smaller wrapped in aluminium foil)Place the square ontop of the round and it shouldn't collapseIf you are still worried about stability, you can use wooden dowels cut to the exact height of the round cakes.Stick four or five dowels into the center area of the bottom cake and set the top cake onto this.Make sure to cover the edge of the cakeboard with icing if you can see the foil when the cakes are stackedThis should be fineGood luck.

It's easy to use a knife and get a flat topYou can also get a silver edge piece that you place around cake pans that help the cake come out evenYou can get it at Michael'sThey also sell the knives with an attachment that ensure that you cut perfectly straight acrossI found it a little awkward to use and it's not that hard to level the cake without using the device- just eyeball it.

- These ports need to be held to a close tolerance ( +- .010) maxYou need to take it to a machine shopyou will not be able to do this with a hand drill or other similar toolsYou may be able to do this on a good drill press with the piece clamped down and use an adjustable boring barthe problem with this is u need to find exact center of the original hole then start by taking just a couple of thousands of material at a time until u get the hole back to being round then take more stockAs a machinist who specializes in automotive machine building I would say you need to take it and have it doneIt won't cost you much and you won't trash your intake$50 to $75 vs a couple hundred or more to replace.

- Maybe You could carefully lay out aluminum foilBut you'll have to be careful not to rip it and watch the cookies carefully.they'll cook faster I'd probably lightly spray the foil with a little cooking spray to keep cookies from sticking to it.
