In tires the sidewall size will be on of the ways to slow or quicken the steering response. the more side wall you have the more flex between the road and rim which means it will respond a little slower because of the sidewall flex. With less sidewall there is less flex between the road and the rim which means that your inputs will transmit to the road faster. Larger or smaller diameter may not make a difference 1957514 may be smaller than a 2357515 but they both have a large side wall where as a 2355015 would have a smaller sidewall or aspect ratio.

The tires are Yokohama Type S(I KNOW, NOT THE BEST TIRE OUT THERE BUT ITS OK) on the tires it says 51psi MAX. I was told that you should always go 5psi under the max. Is this true? Or should I always fill it up to the MAX? Also which psi do I fallow the 35max on the manual or the 51psi MAX on the tire?
Unlike tires on bicycles (where we inflate to just a few PSi below Max), car tire pressures are inflated to the car manufacturer's specs (ie; your owner's manual or door sticker pressure figures). It is because they know your car's weight, suspension/brake designs. They match with with an ideal pressure to ensure optimum tire footprint on the road. This is because tire manufacturers make tires for a whole range of vehicle sizes/weights, the max pressure figure will say what upper limit the tires can withstand. It doesn't mean you have to inflate it all the way there. If you fill it to the 51PSi, you will have very poor grip and harse ride comfort. You will also experience premature wear on the center of the tire because the threads will bulge up along the center. NEVER fill it to the Max pressure stated on the tire unless your manual says it.
