Poor heat treatment or high heat input welding of normal or high carbon austenitic stainless steels will cause sensitization, ie formation of chromium carbides. This martensite is magnetic and the more severe the sensitisation, the stronger are the magnetic properties. When nickel is added, for instance, the austenite structure of iron is stabilized. Martensitic stainless steels are magnetic. *Wrought, austenitic stainless steels, such as 304 and 316, are generally regarded as non-magnetic in the annealed condition, ie they are not attracted significantly by a magnet. However, if they are cold worked they will be attracted to a permanent magnet. The change occurs because the cold work deformation induces a transformation of the microstructure from austenite to martensite. Depends on what you mean by better. Steel is more difficult to work with and now more expensive. Glulam can do everything that you need in a home. You would be able to span further with steel, but that is not usually an issue in a home. Personally I would use glulam.

You must have an open book and a flat plate, and it is a little bit harder to cut the parts than the plate.
