Wing Chun really doesn't specify any particular animal to follow but some people have a need to identify themselves with an animal like the other styles do. I think some story along this line may have said a crane and a fox, others say a crane and a snake. But, if you've learned the style it's stance is called and resembles a pigeon toe, it has a block called wing hand strikes called sun character and flying fingers slap blocks bridge arms... It really is non-specific to any animal and is actually named after a woman which translates to everlasting spring. First of all, let's think of a crane like a giant see-saw, where the plank itself doesn't have any weight. Now cranes have big weights on one side of the pivot, which they can move along (I think, I may be wrong). These cause what is called a 'turning moment'. The further out from the 'pivot' they are, the greater the moment. The other consideration with a crane is it's load. Generally, this is carried a lot further out from the pivot point, on the opposite side from the weights. Now consider this. If you have a small child sitting on the end of a see-saw, you will be able to balance them with a larger person sat closer to the pivot. This is the principle on which cranes work. The moment is the force times the distance from the pivot, and it must be balanced turning each way for the see-saw/crane not to topple. This is somewhat of a simplification, but hope it helps.

The false image was created a long time before by people living in the age of the incidents. It didn't take publishers long to notice that people living back East enjoyed these gritty depictions of the West. Dime novels were a big seller in the 18th and 19th centuries. Look at Stephen Crane. He died in 1900. Hollywood was non-existent as the facet of American life that it holds now. Crane would have been writing this story with the idea that he was depicting a real slice of the wild West that was becoming more civilized.
