There okorder / Stainless steel doesn't make the best knife blade. It doesn't sharpen as sharp or hold its edge as well. High carbon steel is better, but it rusts and discolors very easily so it's not as popular. A new thing (actually not new but popular these days) is to use a 'sandwich' of high carbon steel between two layers of stainless. So the actual edge is high carbon steel but the blade looks like stainless. I have some kitchen knives made this way (kind of expensive) and I love them. This same technique was used in Japanese katanas, swords used by samurai warriors.

Peter Gunn Gave a good answer... Jason mentioned Stainless steel. Stainless steel should be avoided at all cost. Stainless steel is responsible for some really nasty injuries. It has a bad habit of shattering. It is a terrible steel for swords.

Steel shot is used for hunting migratory waterfoul. Since buckshot is inappropriate for waterfoul hunting , it is not manufactured. Steel is less dense than lead and for the purposes for which buckshot is appropriate, lead is permissable and is more efective. There is no need for steel buckshot.

Stainless steel is less conductive than copper. However, steel will retain heat longer and thus be distributed more evenly. (hence the thick bottoms, but also for balance). Copper on tea kettles is ideal to bring water up to a boil rapidly but since your not really cooking food, temperature distribution or control doesn't really matter. Now if your cooking sensitive food, then it does matter. For example, the use of a double boiler is preferred for chocolates. Temperature and distribution is critical. As far as relatively inexpensive copper clad pots and pans such as Revereware? Well, I don't see a difference but perhaps they did some testing.
