- Here in Toronto Canada, I can buy a bag of peeled garlic cloves, I toss them in oil, place them in a foil packet and roast in a dish in the oven at 350 d F for 30 minutes cool and either use or store with a bit of oil on them, this keeps them from drying out, with a head of garlic, remove the cloves from the head, do like I did with the peeled ones and roast the same way, when done you can squeeze them out of the skin for your dishes or do them all and store like I did, seasoning them or adding spice to the roasting part is fine, it does not really help nor harm them if you do.
