- You have to go a lot bigger than that and I agree that wood firing is not going to work with high fire clays unless you build an elaborate kiln with strong draft/draw and use a lot of wood.

- I have never had dry whole chicken legs since it is dark meat and that is the most moistI put them in a 9x13 pan a few tablespoons of water in the pan,sprinkle them with seasoned salt(the paprika in it helps to brown it in the last step of cooking),cover tightly with foil and bake at 350 for at least 50 minutes since these are whole legs,then carefully(don't get burned by the steam) removed the foil and continue baking til they are done or temp them if you are not sure Good luck.
