This answer is likely too late for your birthday cake, but as a 6+ year cake decorating instructor, here are my opinions: 1) Don't refrigerate a cake unless there are instructions to do so (recipe) or unless you are using a filling or frosting that must remain chilled (whipped cream, fruit filling, etc.) Unneeded refrigeration can change the texture of your cake and potentially dry it out2) If you need to keep your cake (unfrosted) for several days, it is better to freeze itWrap it well in plastic wrap, then wrap again in aluminum foil or put inside a freezer bagBut I would allow a good 8 for defrosting, so would take it out of the freezer the night before you will be working with it3) If you make a cake one day and will be decorating it within the next day or two, don't bother with refrigeration or freezingJust wrapped well as stated above and keep it at room temperature4) Another option is to crumb coat the cake with a thin layer of frosting, then store it in a cake dome or other covered cake carrier at room temperatureSee first link in Sources5) You could still ice and decorate the cakes/cupcakes while they were still frozen/semi-frozen(In fact, this would make them easier to work with)But make sure you allow enough time for them to defrost completely before serving timeFrozen cake is not very appetizing.you lose the true flavor of the cakeHappy Decorating!
