Q: what do I need to do to disconnect a solar panel from a battery to protect the panel?
Know that solar panels almost always incorporate a blocking diode to prevent a battery from back-feeding through an un-illuminated panel. Know that solar panels are usually connected to a battery via an electronic switching charge controller, not directly connected. Know that when a solar panel is open-circuited (disconnected from everything) it's terminal voltage will rise to almost twice it's nominal voltage. (22V is common for a 2V panel), unless it is stored in total darkness.

The solar rating of your area is Good so I wouldnt see the reason not to use it. In my area solar rating is very good I get all evergy from it plus even selling it. My payback time was very quick but... If you are not in a hurry or cant afford to spend a lot, wait till end of the next year when the new flexible panels are coming to the market. You've probably seen calculators that have solar cells -- calculators that never need batteries, and in some cases don't even have an off button. As long as you have enough light, they seem to work forever. You may have seen larger solar panels -- on emergency road signs or call boxes, on buoys, even in parking lots to power lights. Although these larger panels aren't as common as solar powered calculators, they're out there, and not that hard to spot if you know where to look. There are solar cell arrays on satellites, where they are used to power the electrical systems. You have probably also been hearing about the solar revolution for the last 20 years -- the idea that one day we will all use free electricity from the sun. This is a seductive promise: On a bright, sunny day, the sun shines approximately ,000 watts of energy per square meter of the planet's surface, and if we could collect all of that energy we could easily power our homes and offices for free.
Q: why don't we take a cue from mother nature and make our soar panels like trees? thousands of leaves or needle (like a pine tree) instead of one big flat panel? Because we and the trees are trying to solve a different problem. We want electricity, a tree wants light (and some heat) for photosynthesis. In getting the electricity we use Silicon for solar panels. (Sometimes Gallium Arsenide). And we exploit the same thing in Silicon that allows them to be computer chips. The fact that they conduct differently when voltage is applied. But for a solar panel that is done essentially in reverse. We GET a voltage difference (electricity) from shoving energy through it. Look up junction bias on google or yahoo for explanation. But the DESIGN problem is: You have to couple these panels together the right way - according to their bias. You can't string them up willy nilly. There is a pattern. And when one breaks in this pattern. (I mean when the actual panel cracks, which they do easily as they are brittle). It can change the overall bias. This can make even be worse than if it was removed, it can actually fight against the working ones. The efficiency is there in arranging them like a tree, but the practicality of maintenance would be daunting.
Q: Hey was looking at a 5 watt 2 volt solar panel and was wondering if it'd be enough to power a regular light bulb. Also need to power a 5volt 6.5 amp pump for at most a minute at a time. So basically if I had this panel would I be able to plug a lamp into it and have it light for 5+ hours at a time with the possibility of running the pump? If not what size panel would I need?
The specifications you give say the solar panel produces 5 watts at 2 volts (DC) so that isn't enough voltage to power an ordinary (20-volt) light bulb. You could get 0 of these panels and connect them in series so they put out a total of 20 volts and the total power available would be 50 watts. The panels would light the bulb that way, provided the bulb isn't over 50 watts and you can afford the panels. A panel does provide enough power for a 2-volt car light bulb less than 5 watts. However, the maximum current you can get from these panels is .25 amperes (5 watts divided by 2 volts = .25 A.) This isn't enough power to run your pump which takes 6.5 amperes - at 20 volts, that would be 780 watts. Another thing to check is the pump motor; many electric motors are designed to run on AC only and will be damaged if you try to run DC through them. Remember solar panels produce DC so the raw output from a panel will not work on an AC motor.

I don't think heating a 70,000 gallon pool with solar panels is practical. My husband has designed and built our solar hot water system. It works quite well. We live in Arizona. There's no way we could heat that much water using sun energy. You have to heat the water and compete with the outside air.
