What you are doing probably protects the meat well enough, but isn't that wax paper hard to remove if your meat isn't thoroughly thawed? I wrap fresh meat in saran, then put it in a freezer bagThere's no harm in adding foil but it's not necessary and a waste of good moneyI also save plastic bread bags for freezingAgain, make sure you get the air out and seal the bag tightly If you use freezer bags and they are clean inside, not greasy or bloody, you can use them several timesTake the frozen meat out of those bags and let it thaw in the fridge covered in the plastic wrap.

Of course the area is larger numerically than the volume, because the thickness is less than 1You don't give the unit of measure of the foil sizeso it is hard to tell exactly what the result should be, but a thickness of a fraction of a millimeter would be typicalYou can get the volume in cubic centimeters (I get about 127), and divide by the area in square centimeters to get the thickness in centimeters.

Simply, once you have compressed the mix into the mold and remove the insert, your only concern at that point is drying the paper, SO, either use a HEAT Lamp, a Heat Gun, or an Oven, providing the mold is of metal so it wont burn in the oven, but you would not make it that hot anyway, just dry slowly.
