If you've got wax paper or parchment paper at home, first wrap the food in that, and then cover with aluminum foil(This also works if you want to cook food in your ovenIt takes a little longer to cook, but it also traps the heat better) As for the shiny and not-shiny side of the foil, it doesn't make a differenceIt's the same, unless you're using the no-stick stuff from Reynolds.
